The texture of this avocado smoothie is so light and creamy from the avocado and fruity from the pineapple. When your kids literally beg you for more, you know you’ve got a winner of a recipe!

Many avocado smoothies call for milk or yogurt to make it creamy, but all you need is a few fruits to bring big flavor and a little water to blend! This makes it a naturally vegan smoothie that’s 100% made of nutrient-dense plants. Here’s what you need to make an avocado smoothie:

  • Avocado: Make sure it’s ripe so it whips into a creamy texture.
  • Green apple: The key to a great avocado smoothie: it brings a naturally sweet tart flavor.
  • Banana: Banana combines well with avocado for creaminess.
  • Frozen pineapple: Here’s the kicker: pineapple enhances the sweet tart flavor and brings a tropical vibe.
  • Leafy greens: Try baby kale or spinach: they have a more mild, sweet flavor than their standard counterparts. Or you can use any greens, roughly chopped.
  • Lemon juice: Fresh lemon juice rounds out the flavors perfectly (trust us).
  • Water and ice: Ice and water add texture and body.

  • Ginger: Add ½ teaspoon grated ginger to the mix.

  • Coconut. A handful of shredded coconut adds even more tropical flair (or use toasted coconut).

Tips for blending

Here’s a trick for blending this avocado smoothie, or really any smoothie recipe:

  • Blend the soft, room temperature items first. In this case, that means the avocado, green apple, banana, and greens. Blend those first with water.
  • Then add the frozen items and blend until a smooth puree forms. This avoids getting the blender blades stuck by frozen fruit and ice.

Smoothies are best eaten immediately. But this avocado smoothie actually lasts 1 to 2 days refrigerated, stored in a sealed container or a mason jar with the lid on. It may separate, which is perfectly natural. Just shake it up and you’re good to go!

Ingredients

  • 1/2 ripe avocado
  • 1 large green apple
  • 1 banana
  • 1 cup baby spinach or kale, loosely packed (or other chopped greens)
  • ½ cup water
  • 1 cup frozen pineapple chunks
  • 10 ice cubes
  • 1 tablespoon lemon juice

Instructions

  1. Pit the avocado and scoop out one half of the flesh into the blender. Chop the apple, leaving the skin on. Break the banana into pieces and place them both in the blender. Add the water and baby kale leaves. Blend until smooth.
  2. Add the ice, frozen pineapple or mango, and lemon juice. Blend again until smooth. Eat immediately or store 1 to 2 days in a sealed jar; if it separates, shake to re-integrate it.
