Here’s a delicious pineapple juice cocktail that’s a must-try: the Pineapple Mojito! Now, a classic Mojito is one of my top favorite cocktails of all time: bubbly, minty, and artfully simple.

I’m typically a purist, but adding tropical pineapple to the mix makes it event better! The sweet tart of the fruit balances the tangy lime and sweet cooling mint perfectly. Every time I try a new mojito flavor, I fall more in love with this classic cocktail.

Ingredients You’ll Need

The pineapple mojito is a fruity spin on the Classic Mojito, a classic cocktail invented in Havana, Cuba. The origins of the drink stem back hundreds of years, but it took off in America in the 1930’s. The pineapple spin simply adds pineapple juice to the classic ingredients. Here’s what you’ll need for this cocktail:

  • Fresh mint leaves: The fresh herb is what makes a Mojito a Mojito.
  • White rum: A light, clean white rum lets the pineapple and mint stay at the forefront without competing flavors (like the vanilla and oak in an aged rum).
  • Pineapple juice: Canned juice is perfectly good here and keeps things easy (of course, fresh juice is even better if you have it).
  • Lime juice: Use fresh lime juice, never bottled.
  • Simple syrup: You can use maple syrup in a pinch, or make your own simple syrup in two minutes.
  • Soda water: A splash of club soda tops it off with a bit of fizz.

Tips for the Best Pineapple Mojito

All you need to know about making a pineapple mojito? How to muddle mint! Muddling is gently mashing herbs or fruits to release their juices. This is how you infuse mint flavor into the drink, instead of simply using it as a garnish. Here’s what to know about making this pineapple mojito:

  • Use a cocktail muddler. It’s the right tool for the job! Here’s the cocktail muddler we use. Don’t have one? Use an unfinished wooden spoon.
  • Muddle the mint first. Gently mash the herb to get out all the oils. You can do this right in the cocktail shaker. (Smell it while you muddle: isn’t it amazing?)
  • Add the remaining ingredients, ice and shake! Then strain out the drink. Don’t have a cocktail shaker? You can use a glass jar with a cover (poke holes in the lid to strain it out).

Party Tip: Make a Mojito Pitcher

Instead of making a single drink, you can also make a pineapple mojito pitcher! This is perfect for parties so you don’t have to shake up each one to order. Make this Mojito Pitcher recipe but add pineapple juice. The pitcher uses mint syrup to infuse the mint flavor, instead of muddling. Here’s what to do:

  • Make this Mojito Pitcher, adding 1 cup pineapple juice to the pitcher with the mint syrup. (Make sure the pitcher is large enough!)
  • Add additional pineapple wedges and mint to the pitcher as a garnish. Voila!

When to Serve a Pineapple Mojito

This is a perfect summer cocktail for backyard cookouts, poolside afternoons, and really anytime it feels fun to have something tropical. The pitcher version has become my default for entertaining a crowd! Because it’s bright and citrusy, a pineapple mojito pairs well with:

Make It A Mocktail

Want to turn this into a summer mocktail? Leave out the rum and add an extra splash of soda water for a virgin pineapple mojito.

You can also make my virgin mojito mocktail which uses orgeat syrup to add a flavor nuance, and add pineapple juice!

Frequently Asked Questions

What makes a pineapple mojito taste good?

The balance between tart lime, sweet pineapple, and cooling mint, with white rum tying it together. Muddling the mint (rather than just garnishing) and adjusting the simple syrup to your juice’s sweetness is also important.

What does a pineapple mojito taste like?

Bright, bubbly, and tropical. There’s the citrusy lime and the herbal coolness of a classic mojito, with pineapple adding a tropical sweetness that makes it taste like a beach drink.

Is peppermint or spearmint better for a mojito?

Always spearmint! Peppermint tastes like a candy cane. If you grow your own, spearmint is the classic “mojito mint.”

Can I make a pineapple mojito without alcohol?

Yes! Skip the rum and follow my Virgin Mojito Mocktail method, adding pineapple juice.
