Description
Go tropical with this pineapple mojito recipe! This golden spin on the classic cocktail is minty, bubbly and tangy sweet.

- 6 mint leaves, plus additional for garnish
- 2 ounces* white rum
- 1 ounce lime juice
- 1 ounce pineapple juice
- 1 ounce simple syrup or maple syrup
- 2 to 4 ounces soda water
- For serving: Ice (try clear ice), pineapple wedges
Instructions
- In a cocktail shaker, muddle the mint leaves. Add the rum, lime juice, pineapple juice, and simple syrup and fill the cocktail shaker with ice. Shake until cold.
- Place ice into a glass, and strain in the liquid. Top off the glass with soda water. Garnish with additional mint leaves and pineapple wedges.
- Pitcher variation (8 servings): Add 1 cup pineapple juice to this Mojito Pitcher recipe, and garnish with pineapple wedges and mint.
