Here’s my new “back-pocket” recipe that I’ve been serving with just about everything these days: this simple Greek yogurt sauce! Just four ingredients make this magic sauce that gives a creamy, tangy lift to anything you’re eating.

The inspiration for this recipe was a Mediterranean-style meal I had in Paris, with vegetables served over a swoosh of creamy sauce. I created this recipe and served it originally with these roasted beets and carrots, and we became fast fans. Now we use it in many ways: as a base layer for roasted broccoli, as a dip for veggies, and a drizzle for bowl meals like Mediterranean bowls. It truly takes minutes, and it’s simple enough to memorize. Basically, it’s our sauce soul mate!

Tips for yogurt sauce

Many yogurt sauce recipes have fresh lemon juice. However, we’ve experimented with this enough to know that it can add even more acidity to the already tangy yogurt. Also, fresh lemons can be expensive! We created this Greek yogurt sauce to have only a handful of simple ingredients: no lemon juice required.

  • Use full-fat yogurt if possible. This recipe tastes best with full-fat Greek yogurt: it has the creamiest mouthfeel.
  • Fresh mint adds a nuance to the flavor. If you don’t have it, you can use finely chopped fresh dill or even fresh parsley. We recommend omitting the herbs if you don’t have fresh.

Ingredients

  • 1 cup plain full-fat Greek yogurt (or vegan yogurt)
  • 1 clove garlic, minced
  • 1 teaspoon finely chopped mint (optional)
  • 1 teaspoon olive oil
  • ¼ teaspoon kosher salt

Instructions

  1. Mix together all ingredients in a medium bowl. Eat immediately or refrigerate until serving. Works well as a dip for veggies or baked falafel, or a layer under roasted vegetables, roasted beets and carrots, tomato confit, and more. Stores up to 1 week refrigerated.
