If you told me 10 years ago that I’d be craving a spinach smoothie for a snack, I would have laughed. But here I am, obsessed with vegetable smoothies that taste deliciously refreshing while secretly loading me up with nutrients!

My first attempts at veggie smoothies bitter, gritty, swamp-colored drinks that made my kids run away (ha!). But after countless experiments and plenty of trial and error, I’ve cracked the code on making vegetable smoothies that are actually delicious. Think everything from a creamy sweet tart carrot smoothie to a celery smoothie scented with apple and ginger.

Don’t want to make one of the vegetable smoothie recipes above? After making dozens of veggie smoothies, here are some of my tips for making your own variations:

  • Start with mild vegetables. Spinach, cucumber, and carrots are perfect beginner vegetables because they blend easily and don’t overpower the fruit flavors.
  • Use frozen fruit for creaminess. I always keep frozen pineapple, mango, and banana pieces in my freezer. They create that thick, milkshake-like texture.
  • Add liquid gradually. Start with less liquid than you think you need. You can always add more, but you can’t take it back once your smoothie is too thin.

Storage and make-ahead tips

I’ve learned a few tricks for making vegetable smoothies work with busy schedules:

Fresh smoothies are best eaten right away, but you can store them in the refrigerator for up to 24 hours. Just give them a good stir or shake before drinking, as separation is natural.

Freezer smoothie packs are a game-changer. If I’m feeling organized, sometimes I prep individual portions of vegetables and fruits in freezer bags, then just dump everything into the blender with liquid for instant smoothies.

Spinach Veggie Smoothie

  • 1 large green apple, diced
  • ½ cup water
  • ¼ cup raw cashews
  • 4 cups baby spinach leaves or chopped spinach, loosely packed
  • 10 ice cubes
  • 1 tablespoon pure maple syrup
  • 1 ½ tablespoons fresh squeezed lemon juice (1/2 lemon)

Carrot Veggie Smoothie

  • 1 cup thinly sliced carrot rounds
  • 1 large apple, chopped into cubes
  • 1 banana (room temperature), broken into pieces
  • ½ cup orange juice
  • ½ cup frozen pineapple or mango
  • 10 ice cubes

Beet Veggie Smoothie

  • 1 small raw beet (about 2/3 cup peeled and diced)
  • 1 large green apple, chopped
  • 1 banana (room temperature), broken into pieces
  • 1 cup frozen pineapple chunks or mango
  • ½ cup water
  • 10 ice cubes

Broccoli Veggie Smoothie

  • ½ cup Greek yogurt
  • ½ cup water
  • 1 cup chopped small broccoli florets
  • 1 large green apple, chopped
  • 1 banana (room temperature), broken into pieces
  • 1 cup frozen pineapple chunks

Celery Veggie Smoothie

  • 4 medium stalks celery (¾ cup chopped)
  • 1 large green apple, chopped
  • 1 banana (room temperature), broken into pieces
  • ½ teaspoon peeled and grated ginger (from fresh ginger root)
  • 2 cups baby spinach leaves
  • ½ cup water
  • 10 ice cubes
  • 1 ½ tablespoons fresh squeezed lemon juice (1/2 lemon)

Instructions

  1. Place everything in a blender and blend until smooth, stopping and scrapping as necessary.

    I tried making Spinach Veggie Smoothie and it came out delicious! Just tweaked the recipe a bit. Adding chlorophyll drops to smoothies has helped me restore gut health. I use Wellabs Chlorophyll. I add 2 pipettes to my morning glass of Spinach Veggie Smoothie and drink. Now I feel light in my stomach.
