It’s hard to get much flavor out of its pine-like needles by just muddling it, so a custom simple syrup is the way to go. Here’s what’s in this rosemary cocktail:
- Rosemary simple syrup
- Vodka
- Lemon juice
- Soda water
How to make rosemary simple syrup
The only part of this rosemary cocktail that takes much effort is making the special simple syrup. Otherwise, you can simply build the drink in the glass (like these easy cocktails). Here’s what you’ll need to know about making Rosemary Simple Syrup:
- It takes about 20 to 25 minutes total. So, plan ahead! You’ll need to make up a batch before you plan to serve your cocktails.
- Use equal parts water and sugar. The recipe makes 10 tablespoons, which makes about 6 of these rosemary cocktails. If you’re entertaining and need more, make a double recipe.
- Bring to a simmer with rosemary, then remove heat and sit for 20 minutes. This allows the flavor of the herb to infuse into the syrup.

- ¾ ounce (1 ½ tablespoons) rosemary simple syrup
- 2 ounces (¼ cup) soda water

Instructions
- Fill a highball glass with ice.
- Pour in the vodka, rosemary syrup, and lemon juice and stir several times.
