There’s a margarita recipe for every flavor and rainbow color, and this new one has captured our hearts. Meet the Beet Margarita! This beautifully balanced cocktail pairs earthy beet juice with the zing of lime, citrus perfume of Triple Sec and the bite of tequila. The main reason to use this juice in a drink? The vivid crimson color it makes in the glass. Add a salt rim and it’s sublime.

What’s in a beet margarita?

The margarita is a classic cocktail invented in Mexico in the 1930’s, and it remains one of the most popular cocktails of all time. A Classic Margarita has just 3 ingredients: tequila, triple sec and lime juice. The beet margarita adds both beet juice and orange to impart a zingy flavor and brilliant color. Here’s what you’ll need:

  • Tequila blanco: unaged tequila makes a straightforward flavor here; substitute reposado for notes of vanilla and oak
  • Beet juice: find a jar at the store. V8 also makes a Beet Ginger Lemon juice that would be great here.
  • Orange juice: beet and orange are a classic flair pairing
  • Triple Sec or Cointreau: either work! Cointreau has a more sophisticated finish
  • Lime juice: fresh squeezed
  • Simple syrup: this balances the acidity of the juices
  • Kosher salt or flaky salt, for the rim

For serving: add clear ice & a salt rim

As you well know: a margarita is not a margarita without a salt rim (or is it?). This beet margarita is best served with a salt rim to accentuate the pop of flavors in the drink. Better yet: add a few blocks of clear ice! Here are a few notes on presentation:

  • Use kosher salt or flaky sea salt (not table salt!). These types of salt are chunky and make for just the right texture on the rim. Better yet? Use pink sea salt for another rosy hue to go with the beets.
  • Clear ice is crystal clear ice made in large blocks or chunks (contrast it with cloudy ice from an ice maker). It’s what bars use to make drinks look fancy.

Serve a crowd with a beet margarita pitcher

Want to serve up beet margaritas for a party? There’s a better way than making each drink to order. Mix together these ingredients in a pitcher:

  • 1 ½ cups tequila
  • 1 cup beet juice
  • 1 cup orange juice
  • ½ cup Cointreau or Triple Sec
  • ½ cup lime juice
  • ½ cup simple syrup
  • 3 handfuls ice cubes

Stir it together, and you’ve got 8 drinks in 5 minutes! Make sure to add the exact amount of ice: it dilutes the drinks just enough.

Description

Ingredients

Scale
  • 1 ½ ounces* tequila blanco
  • 1 ounce beet juice
  • 1 ounces fresh squeezed orange juice
  • ½ ounce Triple Sec (or Cointreau)
  • ½ ounce fresh lime juice
  • ½ ounce simple syrup
  • Kosher salt or flaky sea salt, for the rim
  • Clear ice, for serving

Instructions

  1. Cut a notch in a lime wedge, then run the lime around the rim of a glass. Dip the edge of the rim into a plate of the salt.
  2. Place all ingredients in a cocktail shaker with 4 ice cubes and shake until cold.
  3. Strain the margarita into the glass with the salted rim. Fill the glass with clear ice and serve.
  4. Pitcher (8 servings): Place 1 ½ cups tequila, 1 cup beet juice, 1 cup orange juice, ½ cup Cointreau or Triple Sec, ½ cup lime juice and ½ cup simple syrup in a pitcher. Add 3 handfuls ice and stir until cold.
