There’s nothing I love more than a great artisan pizza with a perfectly charred crust and savory toppings. On busy nights, there’s just not enough time for that. One of my favorite shortcuts on pizza night is pita pizzas, where the pita bread stands in as the crust on a personal pizza.
It’s the trick to a quick and easy meal, and it’s a huge hit with my kids. It’s even faster than delivery pizza!
Baking pita pizza: 2 ways
The trick to pita pizza is getting your pita as crispy as possible during the bake time, so don’t place them on a baking sheet! There are 2 methods that make a great crispy pita bread pizza:
- Pizza stone (best method): While it’s special equipment, the pizza comes out the crispiest on a pizza stone. Depending on the size of the stone and your bread, you may be able to fit up to 4 pizzas at once.
- Oven grates (next best): Pita pizza also works baked directly on the oven racks. It doesn’t come out quite as crispy, but it still tastes great! Make sure to place a baking sheet in the oven underneath your pita to catch any drips.

Homemade pizza sauce
A great homemade pizza sauce is like a secret ingredient, but I won’t gatekeep my favorite. My easy pizza sauce recipe can revolutionize your pizza game. It’s great on anything from homemade pizza to pan pizza to this pita pizza.
Here’s what makes it great:
- It takes 5 minutes in a blender. All you need are canned tomatoes, garlic, oregano, salt, and olive oil. Whiz it up and taste one spoonful from the blender. It’s life-changing!
- The flavor goes big with fire-roasted tomatoes. Fire-roasted tomatoes are key to the flavor here. These are tomatoes that have been roasted on an open flame, making them taste sweet right out of the can. If you can’t find them, use the best quality canned tomatoes you can find.
Variation: roasted red pepper sauce
Another fun idea for a pizza sauce is a roasted red pepper sauce. I’ve made this one for years as not just a pizza sauce, but a pasta sauce and base for dips. Here’s how to make it:
- Place 6 ounces of roasted red peppers, or half a 12-ounce jar, in a food processor blender. (Save the remaining peppers for a topping.)
- Add 10 sundried tomatoes and 1 tablespoon of the oil from the sun-dried tomato jar. Purée until smooth. Taste and add salt as desired.
- Slice the remaining peppers into thin strips and use them to top the pizza.

Pita pizza toppings
Anything goes when it comes to pita pizza! These personal pizzas are great for a fast dinner, or a dinner idea for kids since they’re so fun and versatile. (My kids love to help with this part!) The recipe below includes my favorite margherita pizza and a few other ideas:
- Canned artichoke hearts, chopped
- Red onion, sliced
- Cherry tomatoes, sliced
- Bell peppers, chopped
- Jarred roasted red peppers (with or without the sauce above)
- Sautéed mushrooms
- Prosciutto
- Mini pepperoni
- Pesto
- Feta cheese, goat cheese, smoked mozzarella, or smoked gouda

Ingredients
- ¾ cup Homemade Pizza Sauce (or Roasted Red Pepper Sauce*)
- 1 cup shredded mozzarella cheese
- Grated or shredded Parmesan cheese, for sprinkling
- Fresh basil, for garnish (optional)
- Other toppings: chopped artichoke hearts, red onion, sliced cherry tomatoes, jarred roasted red peppers, sautéed mushrooms, prosciutto, mini pepperoni, chopped bell peppers, pesto, feta, goat cheese, smoked mozzarella, gouda, etc.
Instructions
- Preheat the oven to 450 degrees Fahrenheit with a pizza stone if you have one.
- Make the Homemade Pizza Sauce.
- Brush both sides of each pita lightly with olive oil. Top each pita with 3 tablespoons pizza sauce and ¼ cup shredded mozzarella. Add a sprinkle of grated Parmesan and a small pinch of salt. Add additional bite-size chopped toppings if desired (but not the basil).
- Cook using a pizza stone or directly on an oven rack with a baking sheet underneath to catch any drips for 5 minutes (until crispy).
- Top with fresh basil, if using. Slice into pieces and serve.
Notes
*For the roasted red pepper sauce, place 6 ounces roasted red peppers, 10 sundried tomatoes, and 1 tablespoon of the oil from the sun-dried tomato jar in a food processor or blender. Purée until smooth. Taste and add salt as desired. Use the remaining roasted red peppers to top the pizzas, sliced into thin strips.

Outside of pita bread pizza, there are a few other shortcut pizza recipes I love:

- Opt for pizza bagels instead, or try a naan pizza, French bread pizza, or flatbread pizza.
- Swap veggies for the crust with an eggplant pizza or portobello pizza.

Also used fontina cheese, which we love for our pizza.
