Scrambled Eggs with Cottage Cheese

Ready for the new best trick for your mornings? Try Scrambled Eggs with Cottage Cheese! This healthy cheese adds an irresistibly savory flavor and fluffy texture to the eggs. Even better, it adds a pop of protein and helps to stretch the serving size without adding extra eggs. By adding the cheese, you can get away with 1 egg per serving! Here’s how to make this eggs-tra tasty spin on the classic breakfast.

Tips for scrambled eggs with cottage cheese

It’s easy to overcook scrambled eggs, resulting in rubbery, tastless blobs. But follow these tips and your scrambled eggs with cottage cheese come out fluffy, moist, and perfectly seasoned! Cottage cheese is very high in protein and low in protein for a cheese (source), which makes it ideal for adding to breakfasts and lunch recipes. Here’s what to do:

  • Whisk the eggs, then add cottage cheese. Season with salt and pepper here too.
  • Melt butter on Medium heat. Avoid high heat! You’ll want medium to medium low, so as to not over-cook them.
  • Scrape into soft folds, about 1 to 2 minutes. Scrape them gently into soft folds, stirring only occasionally. Resist the urge to over stir, or you’ll end up with tiny pieces! This all goes fast so keep your eye on it.
  • Resist the urge to overcook your eggs! You want to pull them when they’ve just started to set. Keep going and they’ll turn rubbery.

A note on serving size

One nice thing about scrambled eggs with cottage cheese: the cottage cheese helps to stretch the serving without adding another egg! Typically we use a serving size of 2 eggs per person. But adding the cottage cheese increases the volume. Here are a few things to note:

  • The recipe below makes 2 modest servings. You could also eat it as one serving for a very hearty breakfast.
  • Double for 3 to 4 servings. A double recipe is great for three (the size of our family!), but works for 4 with a side like toast.

Scrambled eggs with cottage cheese for a healthy breakfast

Of course, you can eat these scrambled eggs with cottage cheese with nothing else and it’s a 5 minute healthy breakfast. We like adding whole grain toast or throwing them onto a multi-grain English muffin to balance out with some whole grains. Here are some additional serving suggestions:

Description

Try scrambled eggs with cottage cheese as a healthy breakfast idea! The cheese adds protein and irresistibly savory flavor.

Ingredients

Scale
  • 2 eggs*
  • ¼ cup cottage cheese
  • ⅛ teaspoon kosher salt
  • Fresh ground black pepper
  • ½ tablespoon butter
  • Finely chopped chives, for garnish (optional)

Instructions

  1. In a medium bowl, crack the eggs. Whisk them together until well-beaten and foamy. Stir in the cottage cheese, kosher salt and a few grinds fresh ground black pepper.
  2. In a skillet, heat the butter over medium heat. Tilt the pan to ensure the surface is coated in the melted butter. Pour in the eggs.
  3. Keep the heat on medium. When the eggs just start to set, use a flat spatula to slowly scrape sections of eggs, creating folds. Scrape occasionally until the eggs form soft folds, about 1 to 2 minutes total. Remove from the heat just before they are fully hardened. If desired, garnish with chives and serve immediately.

Notes

*The added cottage cheese helps to stretch the servings. Double for 3 large or 4 medium servings.
