Radishes are overachievers when it comes to growing, it seems. Our garden is full of them! And what better way to eat radishes than on toast? Apparently we have the French to thank for that inspiration. The classic way to eat them is as butter and radishes, but here’s an inventive way to make them into a snack or lunch: and it takes 5 minutes!

This radish toast is a simple, yet elegant breakfast or brunch option. It’s one of those meals that makes you feel fancy, even though it takes 5 minutes to make! Here’s what you’ll need to make radish toast:

The results when you put them all together? A delicious, savory snack that tastes like spring! We were surprised at how well the flavors melded together, especially with the pumpernickel bread. Spicy radishes pair perfectly with the creamy spread, and the chives added an extra layer of flavor that pulled it all together nicely. We’d highly recommend making the labneh for this recipe yourself, but cream cheese would work just as well.

Here are some ideas for customizing these radish toasts:

  • Make them as finger sandwiches to serve as an appetizer or birthday party. Simply cut the bread diagonally and add the toppings.
  • Transform into tea sandwiches. Cut the bread into tiny rectangles like you see at tea parties—serve these however you want!
  • Swap out the chives for thinly sliced scallions. You’d only need to sprinkle on a little bit.
  • Add other sliced raw vegetables. Don’t go too crazy though, as the simplicity of this recipe is what makes it so delicious.

Ingredients

  • 12 slices pumpernickel bread (or Homemade Bread)
  • 1 bunch radishes
  • 1 bunch chives
  • 8 ounces labneh or cream cheese
  • Sea salt or kosher salt
  • Fresh ground pepper

Instructions

  1. Cut the bread into slices and toast it.
  2. Thinly slice the radishes. Chop the chives.
  3. Spread each piece of toast liberally with labneh or cream cheese. Top with sliced radishes and chives, and a bit of sea salt and fresh ground pepper.

    Just wanted to let you know that I made this as a snack today. I had remembered your post and when radishes came in our produce box I knew what I was going to make. Yumm! We had cream cheese on hand, so I just used that, but I think I’ll make the labneh soon.

    Our favorite is a mix 1/2 butter, 1/2 bleu cheese for the spread. Sometimes just put directly on the radish with a knife, no toast!
