I don’t know if you’ve heard about a little winter weather blanketing THE ENTIRE COUNTRY. From the looks of things, the world must be ending. I went to the grocery store tonight on the way home and it was completely wiped out of food (except for the ingredients for Spicy Kale Lasagna, fortunately). So what’s a food blogger to do? Well, the 1 to 4 inches of ice happened to be the perfect consistency for margaritas – no blending necessary! I put my better judgment aside and whipped these lemon margaritas up. And yes, I think I was the only person in Indianapolis taking pictures of their cocktails outside tonight…
What’s in a Margarita?
Traditional margaritas feature tequila, orange liqueur, lime juice, and a little agave to sweeten the mixture. This lemon margarita recipe keeps things super simple with a little bit of lemon juice, sugar, and tequila (ice storm essentials, am I right?). We’ve deviated a bit from the classic margarita recipe, but you can easily tweak the ingredients to suit your palate. Or, if you’d like to shake things up a bit more, you could try using an entirely different citrus juice in place of the traditional lime juice. Grapefruit juice might work well here, and orange juice would give this margarita recipe serious tequila sunrise vibes.
If you’re lucky enough to not have a pile of ice for a yard right now, you can always blend up the ingredients for this lemon margarita recipe with a handful of ice from your freezer. The benefit of making margaritas in the blender is that it’s much easier to double or triple this recipe for a crowd.
For the full experience, enjoy your margarita with some tasty Mexican food. Some vegan lentil tacos or a Mexican pizza would pair nicely with margaritas, as would these loaded grilled nachos. I’d say the world is your oyster when it comes to picking which recipe you’ll make to accompany these margaritas, but if you’re stuck inside because of the bad weather like we are you’ll just have to make do with what you have on hand!
