They sound deceptively simple, but scrambled eggs can be easy to mess up. They’re often overcooked and under-seasoned, odd shaped little rubbery bites. But these eggs? These are the very best fluffy scrambled eggs you’ll taste! They’ve got a lovely light texture and are cooked until just set into a mess of golden perfection. Keep this method in your back pocket for go-to breakfasts. Or lunch or dinner…if you’re like us and eat eggs for every meal! Here’s how to make fluffy eggs.

Ingredients and equipment for fluffy scrambled eggs

Fluffy scrambled eggs are easy to make with the right equipment and ingredients! The key to fluffy scrambled eggs? Milk or cream! Here’s what you need:

  • Eggs: Buy cage-free and organic if you can, local if possible.
  • Milk or cream: Adding a little liquid to your scrambled eggs gives them just the right fluffy texture. All you need is 1 tablespoon, but it makes a huge difference. Use dairy-free milk if desired.
  • Non-stick or cast iron skillet: Non-stick is a great surface for scrambling, or you can use a seasoned cast iron skillet.
  • Spatula: Use a nylon spatula for a non-stick pan or fish spatula for a cast iron pan.
  • Butter or neutral oilEveryone has an opinion on the best fat for cooking eggs. To us, butter is best: it lends a beautiful savory flavor. But use neutral oil for dairy free.

How to make fluffy eggs: a few tips!

Once you’ve gathered your ingredients, it takes just 2 minutes to cook fluffy eggs to perfection. Here are a few tips so that they’re perfect every time.

  • Whisk 4 eggs with 1 tablespoon milk. The milk is all you need for major fluffiness.
  • Use medium heat. Watch it carefully! Any higher and the eggs will cook too quickly.
  • Scrape gently into folds, cooking 1 to 2 minutes total. Don’t stir and break up the eggs! Just scrape gently occasionally until the eggs come together. Remove them from the heat when they are just set.

The basic recipe for fluffy scrambled eggs is just a few ingredients and it tastes incredible. We were surprised at just how fluffy they get with just a little milk. The flavor actually reminds me of diner-style scrambled eggs!

Mix-ins and flavor adders

Now, in our minds these fluffy eggs are perfect as is. But! There’s nothing a little cheese doesn’t make even tastier. Here are a few quick ideas you might already have on hand:

  • Shredded Parmesan cheese
  • Shredded cheddar cheese
  • Soft goat cheese (our favorite!)
  • Fresh herbs: chives, thyme, or basil
  • Veggies: Make them into a breakfast vegetables scramble

What’s the key to how to make fluffy eggs? Milk! Just a touch makes the best fluffy scrambled eggs for quick and delicious breakfasts.

  • 4 eggs
  • 1 tablespoon milk or cream (dairy free if desired)
  • ¼ teaspoon kosher salt
  • Fresh ground black pepper
  • 1 tablespoon butter
  • Optional: 2 tablespoons shredded cheddar or Parmesan cheese (or soft goat cheese), finely chopped chives

  1. In a medium bowl, crack the eggs. Add the milk and whisk them together until well-beaten and foamy. Stir in the kosher salt and plenty of fresh ground pepper.
  2. In a skillet, heat the butter over medium heat. Tilt the pan to ensure the entire pan is coated in the melted butter. Pour in the eggs.
  3. Keep the heat on medium. When the eggs just start to set, use a flat spatula to slowly scrape sections of eggs, creating folds. Scrape occasionally until the eggs form soft folds, about 1 to 2 minutes total. If using, add the cheese. Remove from the heat just before they are fully hardened. If desired, garnish with chives and serve immediately.
