Looking for an insanely delicious grilled cheese recipe? Alex and I had a recent craving for grilled cheese and had a stroke of genius that was too good not to share! We present: Spinach Artichoke Grilled Cheese. Our inspiration for this sandwich was to combine a grilled cheese sandwich with the spinach artichoke melt we made a while back, to meld the deliciousness of spinach artichoke dip into sandwich form.

The result is gooey and totally delicious – similar to the famous dip, but in meal form. We went heavy on the spinach in this recipe to take full advantage of the goodness of dark leafy greens. The magic ingredient is sour cream – just a bit on each sandwich transforms it from the ordinary grilled cheese. For the cheese we used shredded cheese instead of a cheese slice, which makes for the perfect cheesy consistency. We also put cheese above and below the filling, which helped to increase the overall cheesy-ness.

Ingredients

Scale
  • 3 cups spinach leaves, roughly chopped
  • 3 canned artichoke hearts (6 ounces)
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 2 tablespoons sour cream
  • 1 cup shredded cheese (blend of mozzarella, Monterrey jack and provolone)
  • 4 pieces bread
  • Kosher salt
  • Butter

Instructions

  1. Mince the garlic. Drain and chop the artichokes. Wash and stem the spinach, then chop it coarsely.
  2. Heat about the olive oil in a skillet. Add the garlic and saute for 30 seconds. Then add the spinach and 1 pinch okosher salt, and saute for a few minutes until just limp. Add the artichokes and saute for another minute or so, until heated through. Drain off any liquid from the pan. Stir in the sour cream and another pinch of kosher salt.
  3. Spread butter (or olive oil) on one side of each of the bread pieces. Heat a griddle pan to medium high heat. Place 2 pieces of bread on the griddle, buttered side down. On each piece, spread some shredded cheese, the spinach artichoke filling, some more cheese (½ cup cheese per sandwich), and the other piece of bread. When the bottom bread is browned, flip the sandwich and cook until the bread is toasted and the cheese is melted.

    I know you posted this recipe some time ago but I just found it. I was looking for a stuffing for chicken cushions. This was excellent! Everyone in the family enjoyed it and it kept the chicken moist. We’ll be trying it in grilled cheese sandwiches next.

    O-M-G. I usually do not do this, but this, THIS made me. Why have I not thought of this before? I adore all forms of grilled sandwiches and make them all of the time. I also make many different spinach-artichoke dishes. This took all of like, 7 min to throw together, and it resulted in an amazingly ooey-gooey delicious and amazing sandwich. Also- I used the jarred marinated artichokes. My only change next time…will be to use a heartier thicker bread. My standard sandwich wheat bread could not stand up to this.

      You can use either type! We usually use packed in water, but packed in oil would work just as well!

    Have you considered using plain Greek Yogurt? It tastes just like sour cream but has no fat. I’ve been using it in many different recipes and even just as a topper on my tacos!

    Do this on focaccia, saute the spinach lightly in olive oil and garlic, and add sauteed mushrooms and shrimp along with some tomato and thinly sliced purple onion, and you’ll have my favorite sandwich in the world.
