Here’s a bubbly drink that’s the epitome of refreshing: try this Sparkling Cucumber Cocktail! This tall drink pairs the cooling vibe of spa water with vodka and bubbles, an irresistible combination that’s great for summer or any season. It’s a tall highball drink that uses cucumber vodka to infuse vegetable flavor to each sip: but you can use a standard cucumber if you prefer. Get ready for your new favorite drink!

This sparkling cucumber cocktail is a tall highball cocktail that’s bubbly and bright, starring vodka, lemon and soda water. There’s just something about the citrus pop of lemon and effervescence of the bubbles that’s irresistible every time. It’s similar to one of our favorite classic cocktails, the Tom Collins, but with vodka so it’s more like a John Collins. Here’s what you’ll need:

Cucumber vodka

For the cucumber vodka (and a substitution)

Cucumber vodka is vodka that’s infused with the flavor of cucumbers. You can make cucumber vodka at home by infusing vodka with peeled and seeded cucumber slices for 7 days. It’s perfect for summer drinks, especially this cucumber cocktail!

If you don’t have 7 days (and we get that!), there are a few other options:

  • Buy cucumber vodka. There are also several brands of cucumber vodka on the market: Effen Cucumber Vodka is a popular brand. Other bottles are made by the brands Ketel One, Eight Degrees, Western Son and Putnam Pearl.
  • Use cucumber slices and standard vodka (or gin). This drink is easy to make with fresh cucumber, too! Simply muddle 6 cucumber slices (sliced 1/8″ thick) in a cocktail shaker, then strain into the glass.

Cucumber cocktails for a crowd

Pour the ingredients together into a glass and top with soda water! It’s fast, easy and simple to multiply when you’re serving for a party. Don’t forget to garnish with cucumber slices and lemon wedges! Here’s how to make a mix for a party:

  • Mix: Combine 2 cups cucumber vodka, 1 cup simple syrup and ½ cup lemon juice.
  • Fill glasses: Fill each glass with just under ¼ cup of the mix and lots of ice.
  • Top with bubbles: Add ¼ cup soda water to each glass.
