Banana French toast is easy, delicious, and a great way to use a ripe banana! Here’s how to whip up this simple plant-based breakfast.

Ingredients

Scale
  • ½ cup mashed ripe banana (1 banana)
  • 6 tablespoons milk of choice
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ⅛ teaspoon nutmeg
  • 1 pinch kosher salt
  • 4 slices sourdough bread, cut 3/4” thick
  • 1 tablespoon neutral oil or vegan butter, for cooking

Instructions

  1. In a wide shallow bowl or container, whisk together the mashed banana, milk, vanilla, cinnamon, nutmeg, and kosher salt.
  2. Preheat a griddle over medium heat and brush it with ½ tablespoon of the oil (or melt the butter). Soak each side of 4 slices of bread in the banana mixture until it becomes saturated, about 10 to 15 seconds per side. Place the bread on the hot skillet and cook 2 to 3 minutes per side, until browned. Serve immediately with maple syrup.
