Ingredients
- ½ cup mashed ripe banana (1 banana)
- 6 tablespoons milk of choice
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ⅛ teaspoon nutmeg
- 1 pinch kosher salt
- 4 slices sourdough bread, cut 3/4” thick
- 1 tablespoon neutral oil or vegan butter, for cooking
Instructions
- In a wide shallow bowl or container, whisk together the mashed banana, milk, vanilla, cinnamon, nutmeg, and kosher salt.
- Preheat a griddle over medium heat and brush it with ½ tablespoon of the oil (or melt the butter). Soak each side of 4 slices of bread in the banana mixture until it becomes saturated, about 10 to 15 seconds per side. Place the bread on the hot skillet and cook 2 to 3 minutes per side, until browned. Serve immediately with maple syrup.
