Roasted Cauliflower with Apple and Dill

Roasting is one of our favorite ways to enjoy vegetables. Not only is it a fairly simple technique, but it brings out a beautiful flavor that is sometimes quite different from the raw counterpart!
Take this cauliflower, for instance (yet another inspiration from The Herbal Kitchen, a gift from my sister written by a chef based in her home city of Seattle). Somehow roasting in a very hot oven with some apples transforms cauliflower into something elegant and complex…nothing like those white trees on a veggie tray! (Though I must admit I love cauliflower in all forms, even raw.)
This is a wonderful option as a side dish for a fall or winter meal. The original recipe called it a “stunning side dish” – I must say I’d have to agree. If possible, try to get ahold of some fresh dill – it really makes the dish!
Another note: if you plan to take it to a holiday meal (like a Thanksgiving feast!), it does taste best when fresh from the oven, so plan accordingly. I might make it directly beforehand and keep it very warm during the transportation, or even make up the raw veggies and roast them in the host’s kitchen, if possible.

Serves 4 as a side

Notes: This dish tastes best when fresh from the oven, so plan accordingly when preparing. Also, fresh dill is highly recommended for the beautiful flavor that it adds, so try to get ahold of some if possible!
What You Need
1 large cauliflower (2 1/4 pounds whole / 1 1/2 pounds chopped; yields about 7 cups)
1 large red onion
2 apples
3 tablespoons olive oil
1 teaspoon kosher salt
Fresh ground pepper
1/4 cup fresh dill (can substitute about 1 tablespoon dried, but fresh is highly recommended!)
What To Do
1 Preheat the oven to 450°F.
2 Remove the core of the cauliflower and chop it into florets. Slice the red onion. Core and chop the apples into bite-sized pieces (do not peel). Coarsely chop the dill.
3 Line a baking sheet with parchment paper (not necessary, but makes for easy cleanup later). Place the chopped vegetables on the baking sheet, then drizzle with 3 tablespoons olive oil and sprinkle with 1 teaspoon kosher salt and some fresh ground pepper.
4 Roast the vegetables for 40 minutes until the cauliflower is slightly browned, stirring about three times during the baking time. When the veggies are done, stir in the dill, and scoop into a serving dish. Taste and add more salt or pepper if desired. Serve immediately.

Love roasted cauliflower. Such a dramatic transformation from its raw form. It seems almost popcorn-like to me, which has a pretty obvious appeal factor. The colours are so nice here. Your serving dish is lovely by the way :)

Yes, please! Funny - I just made some farro tonight for the first time in forever, and was excited again about how delicious it is! I'm sorry you can't eat it :(

I am not usually a cauliflower girl, but I could go for this. Looks GREAT! I wish you were my neighbors. (Because I then I could “pop in” around dinner time, hahaha!)

I recently did something like this, but with pears. When it comes to roasted vegetables, I’m pretty sure I can’t get enough :) This sounds wonderful!

I’ve made this twice already since you posted it. It’s so delicious. I didn’t have fresh dill on hand the second time so I used Italian parsley. Toasted almonds on top are also a great addition :) Thanks for sharing this recipe!

I just love this photo (and the recipe looks good too). I really like the serving platter/bowl you are using here as well. It looks like an heirloom, almost! My husband refuses to eat cauliflower, but I know you can often substitute in broccoli and wonder how it would work here…I’m not sure.

In terms of substituting broccoli, you could try it out! I think it would have a very different taste than the cauliflower here, since roasted broccoli still sometimes has a touch of bitterness. I almost feel like cauliflower would almost be less "offensive" tasting in this preparation since the roasted flavor with the apples is actually fairly mild. Do you think he'd be up for a taste test? :)
