Roasted Broccoli with Garlic

I am an unabashed raw vegetable lover. In fact, I might have been the only kid to ever cheerfully pack whole tomatoes and broccoli florets in my grade school lunch bags (with a salt shaker, of course)! However, this broccoli preparation is a bit more elegant and does not require much more effort.

We first caught on to the idea when some friends offered roasted broccoli with dinner a few weeks ago. Since then, we have been tinkering with the recipe, but it seems pretty hard to screw up. If you don’t love broccoli, at least give this a try – it is really quite delish!

Roasted Broccoli with Garlic

Serves 4-6 as a side

What You Need
3 heads broccoli
8 cloves garlic
1/4 cup grated parmesan
olive oil
kosher salt
fresh ground pepper

What To Do

Preheat the oven to 425°F.

2  Wash and dry the broccoli. Cut each garlic clove into quarters. Cut the broccoli into large florets.

3  Arrange the broccoli and garlic on a baking sheet and toss with a bit of olive oil. Add kosher salt and fresh ground pepper.

Roast the broccoli for about 20 minutes, until the tips are just browned.

In a bowl, add 1/4 cup of grated parmesan cheese. (We prefer a chunkier grate, rather than Microplaned. A grate excuse to use your food processor’s grating blade.)
