Radish Toasts

The week marked an exciting event – our first garden produce of the year!  Radishes are overachievers when it comes to growing, it seems. While most of our plantings still remain quite small (mainly greens, herbs, carrots, and turnips), these guys are already ready for eating!

And what better way to eat radishes than on toast? (Apparently we have the French to thank for the inspiration.) Instead of the more standard butter and radishes combo, I wanted to mix it up with some of our homemade yogurt cheese and some fresh chives we found behind the garage (score!).

The results? A delicious savory snack that tastes like spring!  I was actually surprised at how well the flavors melded together, especially with the pumpernickel bread (another random inspiration). I’d highly recommend making the labneh for this recipe (it’s incredibly easy!), but cream cheese would work just as well.

Celebrate this season’s first produce and give it a try!

Radish Toasts

What You Need
Radishes
Labneh (or cream cheese)
Chives
Pumpernickel bread
Sea salt and fresh ground pepper (if desired)

What To Do

1  Cut the bread into slices and toast it.

2  Thinly slice the radishes. Chop the chives.

3  Spread each piece of toast liberally with labneh (or cream cheese). Top with sliced radishes and chives, and a bit of sea salt and pepper (if desired).

    Saw you on Tastespotting, and this looks delicious! We do something similar with rye toasts and a Quark from a local creamery that’s just delicious. It’s a great, simple appetizer/first bite. I think I’ll make some tomorrow!

    Our favorite is a mix 1/2 butter, 1/2 bleu cheese for the spread. Sometimes just put directly on the radish with a knife, no toast!

    I just planted radishes for the first time in my backyard, and they are already sprouting! I was beginning to wonder what I was going to do with my new radishes, and I never heard of radish toast before. Sounds amazing. Anything with cream cheese has to be good.:)

    i like raddishes best when sliced thinly and served on bread like this but with butter, salt, and parsley. i’ll have to try on pumpernickle, sounds like a good flavor combo. :)

    Just wanted to let you know that I made this as a snack today. I had remembered your post and when radishes came in our produce box I knew what I was going to make. Yumm! We had cream cheese on hand, so I just used that, but I think I’ll make the labneh soon.
