A Couple Cooks Thanksgiving: Delicious AND Nutritious

With the turn to November, the thoughts of many Americans turn to one thing – Thanksgiving!  We love the tradition of preparing a meal with seasonal foods to enjoy with loved ones. However, the tradition has somehow grown to include large amounts of butter, cream, sugar, and empty calories.

While we’re not against splurges here and there, we’ve grown so accustomed to eating nourishing, whole foods that the thought of not incorporating them into a celebration of fall’s bounty seems disappointing!

We’ve managed to work up a Thanksgiving menu that maximizes nutritional content and (unintentionally!) avoids using butter, cream or sugar. It also happens to be vegetarian and gluten free (again unintentionally!).

We’re so excited to share these recipes with you and will be posting them over the next few weeks. If one of them interests you and you’d like a preview of the recipe before we post it for your meal planning purposes, drop us an email or a comment and we’ll send you the recipe in advance!

Acorn Squash Stuffed with Quinoa and Herbs

Mashed Potatoes with Kale and Garlic

Spiced Pumpkin Seed Truffles
