Cucumber Herb-Infused Water

Happy Labor Day! We’re doing a little labor on this day (shh!), but less than normal. Plus, we got to have a lovely weekend (not working, mainly!) and entertaining family and friends in our new home. Man, it was a chore to get this house put together, but it feels so darn good to see my nephews smiling faces as they stumble about and our dear friends adorable children wipe purple blueberries from their lips and onto our dining room table. This house is being lived in instead of worked on finally, and it feels so good.

Here’s a super simple tip for entertaining that we used this weekend — for a tasty, easy and healthy drink, throw some sliced cucumbers, lemons, and any herbs you have on hand into some water and let it marinade for a bit. You’ll get a super refreshing drink for minimal effort, and it seems fancy. Though our dear friend’s son couldn’t help but comment about the “plants in my drink.”

Lemony Herb Cucumber Water
 
You can use any herbs you have on hand.

What You Need
  • ½ cucumber
  • 1 lemon
  • 2 sprigs rosemary
  • One handful thyme
  • One handful mint
What To Do
  1. Wash and thinly slice one lemon and ½ cucumber.
  2. Fill a pitcher with water. Add lemon slices, cucumber slices, and herbs.
  3. Refrigerate for 1 hour before serving.

    Thanks for the memories! When we were in Ireland, many restaurants brought beautiful wine bottles to our tables filled not with wine, but with herby, chilled water. Lots of mint, cucumber… It was lovely and refreshing and beautiful. Great for all those days spent walking!
