- 1 1/2 cups brown or green lentils
- 4 1/2 cups water or vegetable broth
- 3/4 teaspoon kosher salt
Instructions
- Place the lentils and water in a large saucepan.
- Bring to a rapid simmer, then reduce the heat and simmer for about 20 to 25 minutes until the lentils are tender but still hold their shape. Drain any excess liquid. Add the salt (starting with 1/2 teaspoon if using broth) and serve warm. Storage info: Leftovers can be stored in the refrigerator; reheat on the stovetop.
