For the crumpets

  • 125 grams (1 cup) bread flour
  • 125 grams (1 cup) all purpose flour
  • 1 cup cup lukewarm water, divided
  • 1 cup lukewarm milk (or oat milk for vegan**)
  • 1 teaspoon granulated sugar
  • 2 teaspoons instant yeast
  • ½ teaspoon baking soda
  • 1 teaspoon kosher salt
  • Equipment: Non-stick English muffin rings / crumpet rings*

For the English muffins: 

  • ¾ cup warm milk
  • 2 teaspoons yeast
  • 1 tablespoon granulated sugar
  • 1 ½ teaspoons kosher salt
  • 1 tablespoon melted butter
  • 1 large egg
  • 2 cups (280 grams) all purpose flour
  • ¼ cup whole wheat flour (35 grams)
  • Cornmeal, for rising
  • Equipment: 3-inch biscuit cutter
