This Superfood Salad is full of delicious superfoods: greens, beets, sweet potato, avocado, and wild rice. It’s a perfect healthy reset!

Ingredients

  • 1/2 cup cooked wild rice (prepared in advance)
  • 1 large sweet potato
  • 2 tablespoons olive oil, divided
  • 1 raw beet
  • 2 radishes
  • 1/4 cup shredded cucumber
  • 1/2 avocado
  • 2 tablespoons chopped cilantro
  • 1 handful spinach
  • 1 handful mixed greens
  • 1 lime
  • 1 tablespoon pepitas

Instructions

  1. Prepare the wild rice in advance, according to the package instructions.
  2. Preheat oven to 450°F.
  3. Dice 1 large sweet potato; place it in a bowl and mix with enough olive oil to coat, a sprinkle of kosher salt, and fresh ground pepper. Line a baking sheet with parchment paper and place the potatoes onto the sheet; roast until tender, about 25 minutes.
  4. Peel and thinly slice the beet. Thinly slice 2 radishes. Peel and grate 1/4 cup cucumber. Slice 1/2 avocado. Chop 2 tablespoons cilantro.
  5. To serve, place the salad greens and spinach in a bowl. Arrange small piles of each vegetable and the rice. Drizzle with the juice of 1 lime and 1 tablespoon olive oil. Top with sunflower seeds or pepitas.

Notes

The timing below accounts for the wild rice being made in advance. Wild rice takes about 45 minutes to cook.
