This zesty and refreshing lemon smoothie is a citrusy way to kickstart your morning or as an afternoon snack! It’s loaded with vibrant flavors and nutrients.

Ingredients

  • Zest of 1 lemon, plus 2 tablespoons lemon juice
  • 1 cup milk of choice (or 1/2 cup Greek yogurt and 1/2 cup milk or water)
  • 2 cups frozen pineapple 
  • 1 banana (room temperature, broken into chunks)
  • 6 ice cubes
  • 1 teaspoon maple syrup (or 1 to 2 Medjool dates)
  • 1/8 to 1/4 tsp turmeric (optional, for color)

Instructions

  1. Place all ingredients in a blender in the order listed. Blend until creamy and frothy, stopping and scraping down the sides as necessary, and adding a bit more liquid if necessary.
  2. Taste and if necessary, add another drizzle of maple syrup depending on the ripeness of your pineapple (you likely will not need it). Serve immediately or store in a covered jar in the refrigerator for 1 day.

Notes

  • Fresh lemon is essential. Both the zest and juice are key to the flavor: bottled lemon juice will not deliver the same result.
  • Turmeric is just for color. It won’t change the taste, but it gives the smoothie a golden hue.
  • For a higher-protein version, replace ½ cup of the milk with ½ cup plain Greek yogurt.
  • Banana substitution: The banana is important for texture and sweetness, and there’s no perfect 1:1 swap. If you want to omit it, add extra frozen pineapple and a few tablespoons of Greek yogurt to maintain body.
  • Make it sweeter naturally: 1–2 pitted Medjool dates blended in make a great natural sweetener.
  • Vegan and dairy-free: Simply use your favorite plant-based milk.
