3/4 cup fresh ginger root, sliced into rounds (3 to 4 ounces)
1/2 cup granulated sugar
1/2 cup boiling water
Instructions
Wash the ginger but do not peel. Slice it into rounds.
Add the ginger to a blender with the sugar and boiling water. Blend until fully smooth, about a minute or two. Pass through a fine mesh strainer into a jar.
Store refrigerated for up to 1 month. Stir or shake the jar before using.
