Here’s how to make ginger simple syrup! This easy DIY syrup adds a spicy sweet finish to all your cocktails and mocktails.

  • 3/4 cup fresh ginger root, sliced into rounds (3 to 4 ounces)
  • 1/2 cup granulated sugar
  • 1/2 cup boiling water

  1. Wash the ginger but do not peel. Slice it into rounds.
  2. Add the ginger to a blender with the sugar and boiling water. Blend until fully smooth, about a minute or two. Pass through a fine mesh strainer into a jar.
  3. Store refrigerated for up to 1 month. Stir or shake the jar before using.
