Ricotta & White Bean Fancy Toast

A quick and easy lunch idea: fancy toast! This ricotta spread and white bean spread are dolled up as fancy toast and topped with vegetables.



For the ricotta & radish fancy toast

  • 1 cup fresh ricotta cheese
  • 1/2 teaspoon kosher salt, divided
  • 4 to 5 radishes
  • 1/2 cup sprouts (radish, alfalfa, etc)
  • 4 slices good quality bread
  • Fresh ground pepper

For the white bean havarti fancy toast

  • 15-ounce can cannellini beans
  • 1/2 teaspoon kosher salt
  • 1 tablespoon olive oil
  • ½ red onion
  • 1/2 cup sprouts (radish, alfalfa, etc)
  • 8 slices dill Havarti cheese
  • 4 slices good quality bread
  • Fresh ground pepper


  1. Make the ricotta spread: In a small bowl, stir together the ricotta cheese, kosher salt, and fresh ground pepper.
  2. Thinly slice the radishes. Spread 4 bread slices with seasoned ricotta spread, then top with radishes, a sprinkle of kosher salt, and sprouts.
  3. Make the white bean spread: Drain and rinse the white beans. In a small bowl, stir together beans with the kosher salt, olive oil, and fresh ground pepper. Mash together with a fork until a thick spread forms.
  4. Thinly slice the red onion. Rinse the onion slices under cold water several times to mellow the flavor. Spread another 4 bread slices with white bean spread, then top with Havarti cheese, red onion slices, and sprouts.
