These pumpkin protein balls combine cozy spices with wholesome ingredients for the perfect fall-inspired energy bite. Ready in 15 minutes with no baking required!

Ingredients

  • 1 cup almond flour
  • 1 cup roasted peanuts
  • 12 Medjool dates, pitted
  • ¼ cup pumpkin puree
  • 1 tablespoon maple syrup 
  • ½ teaspoon vanilla extract
  • 1½ teaspoons ground cinnamon 
  • 1½ teaspoons pumpkin pie spice
  • ⅛ teaspoon kosher salt
  • 1 cup Old Fashioned rolled oats
  • ¼ cup plain or vanilla protein powder (optional but recommended)

Instructions

  1. In a large food processor, combine the almond flour, peanuts, dates, pumpkin puree, maple syrup, vanilla, cinnamon, pumpkin pie spice, and salt. Blend until fully combined. 
  2. Add the oats and protein powder and blend again for several seconds until it comes into a dough with no visible date chunks that sticks together when you squeeze it. (If you prefer not using protein powder, taste and add a little more maple syrup to adjust the sweetness level. If the dough is very dry, add water by the teaspoon and blend until the dough comes together.)
  3. Remove 2 tablespoons of dough at a time, squeeze it together, and roll it into a ball. Store at room temperature for 5 days or refrigerated up to 10 days.
