Capturing Summer in a Jar

Every fall, it’s the same: the cool weather is charming until we get a cloudy, rainy day. Putting off yard work to watch football seems like a good idea until I realize there’s only two weekends left until November. And, the garden browns into a slow and tortuous demise.

It especially hurts to watch that bountiful basil plant of August sputter out. Well—what if I told you it was possible to capture all that summery goodness in a jar? A few snips of herbs, some plain old salt, and you’ll have the best tasting seasoning you can imagine.

A sprinkle of this herbed salt will take any savory dish to the next level. For the flexitarians out there, I’m imagining an incredible Thanksgiving turkey dry rub. Here’s a few of our past recipes that we think could use a little herby enhancing:

Healthy Rice Bowl with Kale, Red Pepper and Egg

Baked Butternut Squash Chips

Loaded Sweet Potato Skins with Kale

Quick Veggie Pita Pizzas

Make a jar and I promise come January, you’ll be glad you did.

    Oh my gosh. I am so doing this tonight. This is BRILLIANT!! Honestly. I’m one of those people who can’t get enough basil. It isn’t out of the norm to see me with my face buried in a basil plant, just breathing it in. It’s total aroma therapy for me. <3 Thanks for sharing this!!
