    I have made the cauliflower risotto a few times (changing a few ingredients here and there) and really fell in love with making risotto and realizing how versatile and easy it is! Happy New Year!

      Yes, we love risottos too! Once you know the method, it’s easy to make it without a recipe, and customize it based on what’s on hand. Happy New Year to you as well!

    Thank you so much for posting these wonderful recipes! I made your Black Bean & Sweet Potato Enchiladas and they have been universally loved. I did char the tortillas a bit before rolling and roasted the sweet potato, but you helped me look at those basic ingredients with fresh eyes. Thanks again, and I can’t wait to try out a few more of your tempting recipes!
