Peaches, Greek Yogurt, and Honey {Healthy Snack}

Sometimes, the most delicious things in life can be the simplest. Like a bite of a fresh, ripe peach. We picked up a few the other week at our local market, and were amazed at the amount of beautiful, sultry flavor in just one bite.

In cases like these, the simplest of preparations are the best. So instead of making a peach pie (we’ll leave that to the professionals, like my mother!), I threw together the peaches with some Greek yogurt, stirred in some honey, and sprinkled a few toasted almonds on top.

This is one of our favorite ways to enjoy the fruit of the season. It’s perfect as a snack, breakfast, or even a dessert (like these strawberries with balsamic vingear and Greek yogurt). Depending on the sweetness of the fruit, you can add a bit of  honey (or balsamic vinegar for some tang) — or, just try it plain, as we did here.

Peaches, Greek Yogurt, and Honey

What You Need
Peaches (local, if possible) — or any seasonal fruit
Greek yogurt (or make your own!)
Honey
Almonds (or substitute any nut)

1  If desired, toast the nuts: in a dry pan over medium heat, heat the almonds, stirring occasionally, until browned – about 3 to 4 minutes (make sure to watch them constantly so they do not burn). We like to make a batch and keep them in a sealed container in the pantry.

2  Cut the peaches into bite-sized pieces. If the fruit needs some sweetness, add a bit of honey.

3  Place some Greek yogurt in a bowl. Stir in a bit of honey. Taste, and add more honey if desired. Top with peaches and toasted almonds.

    I look forward—fanatically—to peaches every year. While I prefer to eat them raw, I’ll definitely be adding them to my usual breakfast of Greek yogurt and granola. I see we’re on the same wavelength. :)

    I so agree with your philosophy about simplicity. When I first started blogging in particular, I was trying to overcomplicate things and it’s just not what I really want to eat at the end of the day. This is definitely my kind of snack.
