The Lunch Box: Ideas for Lunchtime

How do you lunch?
The midday meal can be hard to navigate. Many of us are on the go – at the office, at school, between commitments – and it’s hard to pack food that’s nourishing and natural. Too often we can fall back on old habits (like fast or prepared food), or get stuck in a rut (PB&J, anyone?).
The Indy Winter Farmer’s Market has posed a challenge – to view packed lunch as an avenue for something creative, delicious, and, as a bonus, a way to use market ingredients! The IWFM plans to hold their first ever packed-lunch competition on Saturday, February 25th (see here for details).
In the meantime, IWFM asked us to give a lunchtime menu a try. Here’s the lineup – we’ll be releasing the recipes throughout the week!

This looks great and I can’t wait for more ideas. I struggle with lunches, and am really making an effort to cut out meat for this meal (much to your advice a while back). Those butternut chips look good, too.
