Italian White Bean Soup

We’re back with a new video in our series with Craftedspoon!

In our 5 A Meal series, we’ve teamed up with our friends JD and Jason at Craftedspoon to give you ideas for cooking a meal for $5 a person with a healthy focus, local ingredients, and a great taste!

Last time, we showed you how to make loaded sweet potatoes, one of our favorite meals. This time, we’re excited to show you one of our favorite soups, an Italian White Bean Soup.

Why do we love this soup? Well, first of all, it’s remarkably delicious – we like to call it liquid pizza (really!). Plus, it’s easy to make, feeds a crowd, and can utilize local and seasonal ingredients (depending on where you’re located, of course!).

    Sonja & Alex … just a general comment. Aside from observing that you’re both very caring & involved people, your blog has slowly become one of my favorites.

    As I’ve said here before, I love the detail in your recipes and your encouragement to buy local … but my favorite part of coming here is the wide variety of meat-free dishes. I’m not a vegetarian, but I do believe in keeping my meat consumption low. It’s a little difficult to find healthy vegetarian recipes that aren’t all pasta or tofu, etc., so it’s refreshing when I’m feeling stagnant and wanting something new in my belly, to be able to come here and just browse. Thanks for all the great variety and delicious meals!!! My meal plan for next week includes 3 (possibly 4) recipes from your site. =)
